He worked alongside Henri Jayer in 2002 during a harvest at Domaine Rouget and went on to establish a domaine in Roussillon where he did everything himself. In 2007, he returned to his true love, Burgundy. While officially considered a négociant, Olivier and his team manage the vineyard work for all but one of the plots he sources from and has since purchased 2 of these plots.
